Sometimes all I want to do on my nights off are make a delicious dessert and sit on the couch with B. LMAO. Who am I kidding, thats actually like every night. We are such home bodies I can’t even take it. I made this simple, delicious dessert for Brian and I one night we were hanging home. I like to think of coconut cream as a healthier take on a classic whipped cream. It’s light and refreshing yet rich enough to still feel indulgent.Scoop the top of a chilled can of full fat coconut milk into the bowl of your stand mixer with a few tablespoons of powdered sugar and watch it whip up into a light and fluffy topping. Serve with berries, granola, and some shaved chocolate and you have a better-for-you dessert in under 10 minutes.

Notes: Keep a can of coconut milk in the fridge at all times like we do so you can make coconut cream on the fly. Don’t have granola? The toppings are endless. Try any nut you have in your pantry, dried or fresh fruit, or enjoy on its own. Use coconut cream as you would with whipped cream.


1 can full-fat coconut milk, chilled in the fridge overnight
2 Tbsp organic powdered sugar
1/2 cup fresh berries
2 Tbsp granola or crumbled breakfast bar

Remove lid from can of coconut milk, careful not to disrupt the settled cream, and scoop hardened cream from the top. Reserve liquid for another recipe. Add cream to stand mixer with sugar and beat until smooth, about 1-2 minutes. Top with berries, granola, or your choice of toppings.
