The first time I made this juice was after a long night out in New Haven with some nursing friends. There was this one time (ok, maybe 2 or 3 times) that lunch turned into drinks and drinks turned into…tequila shots.

The new graduate nurses at my work all participate in a nurse residency program. Basically we would meet each month to discuss our experience transitioning from student to professional nurse but it was mostly an excuse to get lunch + drinks. Just picture a bunch of nurses around a table at a tequila bar with fish tacos and spicey margs. It was basically a major vent session that somehow lead to tequila shots and ended at a karaoke bar. LOL. Yeah, that really happened. Now playing: I don’t want to miss a thing by Aerosmith.

Let’s just say I needed some greens in my life the next morning and made this refreshing juice. Cucumbers are ultra refreshing and ginger is great to sooth your stomach, especially after a night of one-too-many tequila shots. I love how green the kale makes this juice but kale can be bitter so add more apples if you wish!

Don’t have a juicer? Throw everything into a high-speed blender + make a smoothie instead.


1/2 bunch of kale
2 cucumbers, halved
4 celery sticks
2 apples, cored + halved
1 inch piece of ginger
20oz. spring or filtered water
1 lemon, juiced

De-stem kale leaves, rinse and set aside. Cut 1 inch piece of ginger and remove peel. Wrap kale leaves around cucumbers and pass through juicer. Repeat with the remainder of ingredients. Add water and lemon juice + stir to combine. This juice stays fresh in fridge for 2 days.

Serves 2-4
