NO BAKE CHOCOLATE BREAKFAST COOKIES

Hi Friends! How are you?! I can’t believe the summer is practically over. It goes by so fast! Especially taking summer classes it’s like I blinked and the fall semester starts omg, today. It already feels like fall and I’m kind of having a moment. I’ll miss you, favorite sundress.

As you know my blog and IG have really shifted focus to include more health and wellness related content. It’s not that I don’t enjoy cooking and writing about myself. Lol. I’ve been working on a lot of fun new things lately! Today I’m sharing a little treat I made in partnership with my new favorite supplement LifeFuel’s Daily Essentials Shake! This no bake chocolate breakfast cookie recipe is adapted from one of my favorite vegan baker bloggers Oh Lady Cakes! I’ve talked about Ashlae here in the past and always look to her blog for easy, healthy-ish desserts!

NO BAKE CHOCOLATE BREAKFAST COOKIES

1 cup rolled oats
1-2 Tbsp ground flax
1/2 tsp salt
1/4 cup coconut oil
1/4 cup maple syrup
1/2 cup peanut or almond butter
1 scoop chocolate protein powder
3 Tbsp cacao powder
1/2 tsp salt
Coconut shreds

Heat coconut oil, maple syrup and peanut butter in a small sauce pan over medium heat. Add the cacao and protein powder and whisk until smooth. Remove from heat and stir in oats, flax, and sea salt. Drop oat mixture onto prepared baking sheet using a small cookie scoop or tablespoon. Carefully press down slightly using the back of a spoon or your hand and top with coconut shreds. Place baking sheet in the refrigerator to set the cookies for about 20 minutes.
