RASPBERRY ALMOND TRUFFLES

Happy Valentines Day!! Make these truffles for your boo boo like I did! They are super easy and you probs have everything you need in your pantry. Oh, you don’t stock coconut cream?? Why the heck not?! I put it in my coffee or make a quick coconut whip for dessert. It’s the best! Trader’s always has a bunch, you still have time!! Or sub heavy cream. Do you have that? No? Jeez, you’re SOL.

Haha jkjk but the trip to the store would totally be worth it. Homemade truffles are so much better than the box you would buy your boo at CVS. I mean, if you don’t have the time you best get the Russell Stover’s but homemade chocolates say so much more. Homemade truffles say, ‘I love you so much I took the time to hand roll 36 chocolate truffles.’ That’s true love!!!!!!

This one is short and sweet bc its V-Day and I’m going to make a heart-shaped pizza. Or maybe I’ll make filet mignon? Homemade pasta? Yeah, pasta! Is it hard? Ugh, idk. Something good and carby. #valentinesdayathome

RASPBERRY ALMOND TRUFFLES

1 cup coconut cream
1 Tbsp coconut oil
1 pound semi sweet chocolate chips
1 tsp almond extract
1 cup freeze dried raspberries, pulverized

Heat coconut cream and coconut oil in a small sauce pan over med ium-high heat. Bring to a boil and turn off heat. Add chocolate and gently swirl pan to coat chocolate. Rest undisturbed for about 5 minutes then whisk until chocolate is fully melted, smooth and shiny. Transfer chocolate ganache to a large mixing bowl and place in the refrigerator to set for about 1 hour.

After the chocolate is firm (but not hard), use a small ice cream scoop or a melon baller to form 1 inch balls. Place on a parchment lined baking sheet to chill again in the refrigerator for about ten minutes. After balls are chilled, wet hands slightly and roll each ball in your palms, warming slightly. Transfer to bowl of pulverized raspberries and roll to coat. Repeat with remaining truffles and store in an air tight container on the countertop for a few days or store in the refrigerator up to 2 weeks.

Makes about 3 dozen truffles
