SMOKEY TOFU SANDWICH

Sometimes you just want a tofu sandwich…am I right?! This recipe was inspired by one of my favorite cookbooks right now, Thug Kitchen. It’s an exclusively vegan cookbook and has been my go-to resource for meatless Monday’s. I now cook frequently with foods I once avoided like tofu, tempeh, and chickpeas.

Their recipes are super simple and good for you, not to mention the authors are incredibly funny and inspire you to make better meal choices by simply cooking for yourself. The author’s motto, “eat like you give a f*ck”, aggressive, but I can get down with that. Start caring about what you put into your body and watch it change. I marinated the tofu in a savory, smokey sauce and pan-fried the slices in coconut oil until crispy, added a bunch of fresh toppings + B’s special sauce and the best tofu sandwich was born!

The marinade for the tofu is easy, just don’t forget to press the tofu beforehand so it can absorb all the smokey goodness. It tastes better the longer it sits so make it the night before if you can. Trust me, you will thank me the next day when you don’t have to wait 2 hours for lunch. This recipe makes plenty of tofu so make a few sandwiches at a time and store them in the fridge. Sandwiches make great work lunches or eat half as a snack and save the rest for later. Brian’s sauce is a mixture of mayo, hot sauce, maple syrup and Dijon. I subbed the mayo for yogurt on mine because this girl needs to keep her cals in check, feel me? If you are strictly vegan skip the sauce or get creative and make your own.

SMOKEY TOFU SANDWICH

2 Tbsp soy sauce
1/4 cup water
1 Tbsp maple syrup
1 tsp hot sauce (adjust to your preference)
1 tsp chili powder
1 Tbsp coconut oil, for pan frying
4 slices of rye bread
Lettuce, tomato, sliced red onion + special sauce

Press tofu for about 30 minutes to remove excess moisture. Combine the first 5 ingredients in a shallow dish to make the marinade. Slice tofu about 1/4th inch thick and place in marinade. Cover and allow to marinade in the fridge for at least 2 hours.

Heat coconut oil in skillet over medium heat. Add tofu and pan fry on each side until golden brown, about 4 min. Assemble sandwich with your choice of toppings.

Makes 2 sandwiches
