B + I keep saying how ready we are for summer to be over. We wait and wait for it to hurry up and get here and then we’re like ugh, it’s so hot, I can’t wait for fall. Haha. Can’t please us. Who doesn’t love the fall though? Shut off the AC, sleep with the window open, throw on jeans, a flannel and boots type of weather. Make all things pumpkin and bring on the chai lattes, please! Fall in a nutshell, basically.

My sister and I are headed to Brooklyn today to go to Wanderlust, a yoga festival that travels the U.S. and Canada that celebrates all things mindfulness. We both have a lot going on as of late and are craving a major re-set. A 5k, yoga + meditation class is exactly what we need to sweat it out and re-center for Fall.

I can’t go anywhere without food so of course I made us snacks. Yes, I’m that girl with a bag of almonds in my car and a granola bar in my bag, and you hardly ever see me without a water bottle. My friends and family make fun of me but who’s the first person they see when they are hangry? ME.

You gotta be prepared! Especially for day trips. Can’t be stuck in traffic starved without anything to eat. These Vanilla Chai Energy Bites are full of warming fall spices that are great for digestion and blood sugar stabilization and also packed with protein! Sounds like the perfect post 5k snack if you ask me. What I love about these little bites is that they are already portioned for you. Sometimes I find a full energy bar too filling as a snack. These make it easy to have 2-3 depending on how hungry you are.

Notes: For protein powder, I cycle a few different brands. Right now I am loving Aloha. It’s a plant-based organic protein that has a really nice vanilla flavor without any suspicious additives. For the record, I’m weird about protein powder. It has to be organic but it also has to taste good. This one fits the bill without having a grainy mouth feel or any digestive upset. Also, feel free to adjust the chai, I know some like it spicy! Keep in mind you may need more or less almond milk depending on how fresh your dates are.

1 1/2 cups dates, pitted
1 cup cashews
1/2 cup almonds
2 Tbsp vanilla protein powder
1/2 tsp cardamom
1/2 tsp cinnamon
1/2 tsp ginger
1/4 tsp allspice
1/4 tsp cloves
1/4 tsp black pepper
1/4 tsp sea salt
1 tsp vanilla extract
2 Tbsp almond milk

Line a baking sheet with parchment paper and set aside. Add dates to food processor and pulse until finely chopped. Add nuts and pulse until finely chopped once more. Add remaining ingredients and process until mixture comes together and resembles batter. You may need more or less almond milk depending how fresh your dates are. Use a small cookie scoop or Tbsp to measure even balls. Roll with hands and place on cookie sheet. Freeze until balls slightly harden. Enjoy right away or store in the refrigerator in an air tight container for snacks all week.
