I made banana bread for no lie 2 months straight once. Brian and I were eating paleo at the time and I was trying to perfect a grain-free recipe. Maybe one day I’ll share that one but I don’t care what you say, grain-free bread is just not the same. This banana bread though is the bomb.
I made this bread this morning (in my robe, obviously) with Remi at my feet licking my toes. Haha. He’s such a freak but I love him so much. I was never really a “dog person” per say. I mean yes, I like dogs and think they are cute but after a few minutes I’m like annoyed and want them to leave me alone. But Remi has really stolen my heart. I mean, I let this guy sleep in my bed – that’s when you know its real. I legit have to refrain myself from posting picture of him on IG daily because I realize how annoying crazy dog moms can be. Lol.
I think its kind of like when you hate everyone else’s kids but then you have your own and you become complete mush. Right? Am I the only one who thinks that? Kind of banking on that because as of late I don’t have a maternal bone in my body. Hence, the crazy dog mom status.
After I put this bread in the oven I took Rem out for another slog. He is so bad on the leash right now I can’t even take it. Every time I come back I say to B, “I’m never doing that again.” He just gets so excited by the site of a legit bird. We need like an intervention. Coming back to a house that smelled like warm banana bread though was heaven. I forgot how bad Rem was on our slog as soon as I saw how perfect this bread came out of the oven. Haha. Please try this bread, you will not be disappointed.
Its made with whole wheat baking flour and sweetened naturally with maple syrup and coconut sugar so don’t feel guilty enjoying this for breakfast or have 2 slices for lunch with cashew butter like me! Haha. It’s also vegan and dairy free if you are into that sort of thing.
Notes: Make it GF! Swap the whole wheat baking flour for your choice of gluten-free flour. Don’t have flax meal? A regular egg would work just fine. VEGAN CHOCOLATE CHIP BANANA BREAD
1 Tbsp flax + 2 1/2 Tbsp water
3 bananas (about 1 1/3 cups), mashed
1/4 cup maple syrup
1/4 cup coconut oil
1/2 cup almond milk
1 1/2 cups whole wheat baking flour
1/3 cup coconut sugar
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/3 cup chocolate chips
Make flax egg in large mixing bowl, set aside for 15 minutes. Preheat oven to 350 degrees. Spray loaf pan with coconut oil + line with parchment paper. Combine dry ingredients in separate bowl. Combine wet ingredients with flax egg. Add dry ingredients to wet ingredients and stir until just combine. Fold in chocolate chips and dump batter in prepared loaf pan. Bake for 55 minutes to 1 hour or until knife tests clean.
